Lallemand is a global leader in the development, production and marketing of microorganisms, including yeast and bacteria and specialty ingredients.

Lallemand, a family-owned Canadian company with over 4700 employees globally, specialises in the development, production, and marketing of yeasts, bacteria, microorganisms, and their derivatives. Working across a variety of industries, the company provides microbiological solutions for a wide range of applications, from human and animal health and nutrition to baking, oenology, brewing, food ingredients, probiotics, and biofuels.

Marco Petruccelli, CTO and CIO, has overseen a company-wide digital transformation that has been more akin to a full business transformation, as ageing plants are upgraded and automated, new service offerings increase, new markets open and employees are extensively working outside of the traditional office setup.

He discusses the recent implementation of the Microsoft Dynamics 365 CRM platform, how real-time data will make a massive operational difference, and how Lallemand IT have gone from being mainly based in Montréal to now being based in four key strategic IT hubs located in Canada, France, Brazil and South Africa, as well as additional key support in the UK and Australia.
